Soya Nuggets

Ingredients:
  • Soya Chunks : 30 to 40 nos
  • Pepper Powder - 1tsp
  • Ginger Garlic Paste - 1tsp
  • Garam Masala - 1 tsp
  • Chilli powder - 1/2 tsp
  • Turmeric Powder - A pinch
  • Coriander Powder - 1/2 tsp
  • Soya Sauce - 1 tsp
  • Green Chilli Sauce - 1tsp
  • Tomato Sauce - 1tsp
  • Cornflour - 1tbsp
  • Maida - 1 tbsp
  • Water - 2 tsp
  • Salt
  • Oil for frying.
  • Egg white -optional
Preparation:
Soak soya chunks in water for 10 mins.
Boil some water with salt and add the soya chunks and keep aside for 1/2 hr.
Squeeze out the excess oil from the soya chunks.
Take a bowl add pepper powder, chilli powder, coriander powder, turmeric powder,garam masala,salt, maida and cornflour..
Then add gimger garlic paste, chiili sauce, soya sauce,tomato sauce and egg white .Mix well to form a paste.
Add the soya chunks to the above mix ,so that the soya get covered with the batter.
Take a pan. Pour oil (shallow fy).Flame to be on low
Now add the soya chunks and shallow fry on low flame.
Garnish with coriander leaves and serve with ketchup.

The soya nuggets taste similar to sausages.

Cake Roll

Ingredients:
  • Maida - 1/4 cup
  • Sugar - 3tbsp
  • Egg - 2
  • Baking powder - a pinch
  • Ghee - 2 tsp
  • Vanilla essence - 1 tsp
  • Mixed Fruit Jam - 2 tbps

Preparation
Separate the egg white and the yolk.
Take a bowl add the yolks and beat the yolks with a beater.
To this add the sugar and beat the mix till the sugar dissolves.
Add baking powder to the maida and mix well.
Now add the maida little by little to the egg yolk mixture . Beat the mixture well.
Then add vanilla essence and mix again.
Take a flat non stick pan (dosa pan).
Pour ghee . Pour the above cake mixture to the greased pan and spread it evenly.
Cover and cook for 5 to 6 mins on low flame.
When the cake is cooked transfer it to a plate and then spread the jam on one side of the cake and roll the cake .
Wait for 2-3 mins and then cut it

Note: Heat little water in a pan and add mixed fruit jam and melt it This can be used to spread on the cake.

Noodle Cutlet

Ingredients:

Noodles Boiled  - 250 gms
Butter                - 2 Tbsp
Maida               - 2 Tbsp
Milk                  - 2 cups
Grated Cheese  - 1/2 cup
Salt to taste
Black pepper powder - 1/2 tsp
Bread Crumbs - as required
Oil


Preparation:
Heat butter in a non stick pan .
Add refined flour and sauté for a couple of minutes. 
Gradually add milk and whisk continuously to avoid lumps. 
Add cheese, salt, black pepper powder and stir to mix well to form a white sauce (not paste).
Add the noodles and mix well. 
Grease a baking dish. Transfer the mixture into it and spread evenly. 
Set aside to cool in the refrigerator for half an hour.
Take it out of the refrigerator. 
Take a spoon-full of the mixture, roll it in fresh breadcrumbs and shape it as you wish. 
Similarly make other cutlets.
Keep them in the refrigerator for fifteen to twenty minutes.
Heat a pan. Add a little oil and place the cutlets on it. Cook on medium heat till both the sides are evenly golden. 
Drain and place them on an absorbent paper. 
Serve hot.
